Harvest: 31st March 2010, free drained off skins on 10th April 2010 and racked by gravity feed to a mix of old and new French oak barriques. Gravity fed to bottle 12th June 2011. DIAM seal, imported bottles.
Analysis: Alc. 13.5% vol., pH 3.35, T/a 6.85g/lt.
Bouquet: Closed with earthy, bramble and hints of dark cherry lifted by subtle French oak to add depth of character to a delicate bouquet.
Palate: An earthy, sappy Pinot fruit leads to a rich mid-palate with a velvety texture. This is a tightly structured wine with a slight tingle of acidity adding to the fine tannins, giving excellent balance to the long finish. This is a wonderful food wine complimenting most meat & cheese dishes.
Cellaring: With correct cellaring this wine will develop wonderful complexities over the next two decades or more. This wine was never fined or filtered & in time will throw a crust, carefully decant before serving.
Winemaker notes: This limited release of 1020 bottles was made from the best hand selected fruit, fermented with native and cultured yeasts and free drained to new and one year old French oak barriques for 18 months prior to bottling, relying only on gravity feed. It is a unique and rare wine of extraordinary finesse and complexity.
